B.L.W.'s "Almond Pulp" Muffins/Bread

“Lemon Poppy”

“Lemon Poppy”

* all organic ingredients * 

-- I cup almond pulp

“Blueberry”

“Blueberry”

-- 2 cups whole wheat flour

-- I cup coconut sugar

-- I cup almond milk

-- 4 eggs

-- 3/4 cup coconut oil (melted)

-- 1T vanilla extract 

-- 3t baking powder

-- 1t salt

Depending on what flavor you want to make, add the following

2 cups fresh blueberries or any berries

2 cups cut apple, cinnamon sugar for on top

1/4 cup poppy seeds, 2T lemon juice, 1 lemon zest

1 package chocolate chips and 3 bananas mashed

Directions:

Heat oven to 400 degrees

Measure all dry ingredients and place into a bowl

Measure all liquid ingredients and place in a bowl

Mix wet ingredients with dry ingredients into one bowl

Add what flavor muffins/bread you choose and fold in! 

Place mixture in muffin tins or a bread pan (lined or sprayed)

Cook for 40-50 mins in middle rack. (check with a knife)

Briana's Peanut Butter Bites

* all organic ingredients *

-- 2 cups dried gluten free oats

-- 2 cups toasted coconut flakes, unsweetened

-- 1 16-oz. jar crunchy peanut butter

-- 1 cup chia seeds

-- 1 10-oz. package, chocolate chips

-- 2/3 cup raw honey

-- 2T vanilla extract 

-- 1 cup toasted coconut flakes, for rolling of each ball 

Directions:

Measure all ingredients into a bowl, mix with your hands, until fully mixed.

Cover and let chill for half an hour. 

Once chilled, roll into balls of whatever size you prefer, and roll balls in the coconut flakes on a large plate. 

Then placing them on cookie sheet freeze for one hour.

 Store in a glass container, and refrigerate for up to a week.

  • 1 cup cold coffee

  • 1 cup homemade almond milk

  • 1 frozen small banana

  • 3 T hemp hearts

  • 1 T cacao nibs

  • 1 T shredded coconut

  • 1 t raw cashew butter

  • 1 sprinkle cinnamon

 

 DIRECTIONS

Blend all ingredients on high for one minute. Add one cup of ice to blend if you want it thicker.

Pour into a mason jar.

Briana's YUMMY Almond Butter Cups

-1 cup coconut oil

-1/2 cup coconut sugar

-1 cup cacao powder

-1/2 cup almond butter



Prepare mini muffin tins lined with small baking cups. approx. 12

In a small saucepan heat coconut oil on low heat until melted. Add coconut sugar and cacao powder, mix.

Pour chocolate mixture in each baking cup half way to the top.

Dollop a small amount of almond butter in each mini cup.

Pour remaining chocolate mixture into each cup.

Place in freezer for 2 hours.

Take out of freezer when ready to eat.

B.L.W.’s Very Cherry Smoothie

*ALL ORGANIC INGREDIENTS*

  • 1 & ½ cups coconut water*
  • ¼ cup tart cherry juice
  • 1 cup frozen tart cherries
  • 1/2 cup frozen blueberries
  • 1 cup diced kale or spinach
  • 1 T almond butter
  • 3 T hemp hearts
  • 1 pitted date
  • 1 sprinkle cinnamon

 

 

 

DIRECTIONS

Blend all ingredients on high for one minute. 

Pour into a mason jar.

* coconut or almond milk are good substitutes, per taste

B.L.W.'s Elderberry Magic

*ALL ORGANIC INGREDIENTS*

  • 7 cups filtered water
  • 1 1/2 cups elderberries (If you need advice where to buy, please contact me) 
  • 3 T fresh peeled ginger 
  • 3 T fresh peeled turmeric 
  • 1 T cardamom
  • 1 T cloves
  • 1 T ginger
  • 1 T turmeric
  • 3 T cinnamon 
  • 2 cups raw honey 

DIRECTIONS 

Add water to a large saucepan. Mix in elderberries, fresh ginger and turmeric, and all the spices. 

Bring to a boil, turn down to low and cover. Let simmer for 1 hour or until about half of the liquid has disappeared. 

Remove from heat and let cool down.

Measure out the honey in a medium glass bowl. 

Pour the elderberry mixture through a strainer into the glass bowl with honey. 

Discard the elderberry mixture. 

Stir until honey is mixed in. 

Pour into mason jars. 

Store in frig! Usually lasts 1 to 2 months

Briana's Broccoli & Corn Soup

*ALL ORGANIC INGREDIENTS*

  • 6 ears of corn, cut off cob
  • 2 lbs broccoli, cut off stems
  • 2 onions, diced
  • 2 large carrots, diced
  • 6 cups low sodium vegetable broth
  • 1 can coconut milk 
  • 6 oz sharp chedder, shredded
  • 6 T olive oil
  • 1 head garlic
  • salt and pepper to taste

DIRECTIONS 

Sauté garlic, onion, chopped corn, chopped carrots and broccoli in olive oil. Add vegetable broth and salt and pepper to taste. Simmer for 15 mins on low.

Place 75% of mixture in vitamix and blend for 10 seconds. Put back in pot, add coconut milk, stir and cover for 10 minutes on low. 

Add shredded sharp cheddar and stir.

B.L.W.'s "Greek" Kale Quinoa Salad

*ALL ORGANIC INGREDIENTS*

 

  • 1 large bunch of kale
  • 1 cup cooked quinoa
  • 4 small cucumbers
  • 1 pint red cherry tomatoes
  • 1 small red onion
  • 1 small container feta
  • kalamata olives 

DRESSING

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • garlic and pepper to taste

DIRECTIONS

Remove center stalks of kale, chop, set aside.

Chop other salad ingredients, add kale and mix together in bowl, then add quinoa, olives and feta, mix again.

Pour dressing over salad. 

With your hands, massage ingredients with dressing until fully coated.

Briana’s Springtime Honey Lozenges

* all organic ingredients *

 

 -- 2 cups coconut oil


-- 1 cup of Manuka or raw honey


-- 1/8 cup of cinnamon

 

DIRECTIONS:

 

* Melt coconut oil (do not bring to boil)

* Pour coconut oil in a blender

* Add honey and cinnamon

* Blend 30 seconds

* Pour into small candy molds, as seen here

* Freeze for three hours in molds

* Pop out of molds, and store in a plastic container in freezer

Briana’s BCC Bread

* all organic ingredients *

 

-- 1 & ½ cups almond flour
 

-- ½ cup coconut sugar
 

-- 1 cup unsweetened coconut flakes

-- ½ cup cocoa powder

-- 1 tsp ea. baking soda, baking powder

-- 1 T apple cider vinegar

-- 3 ripe bananas

-- 1 tsp vanilla extract

-- ½ cup melted coconut oil

-- ½ cup filtered water

-- 1 cup chocolate chips

 

* Preheat oven to 350 degrees.

* Mix all dry ingredients together in a bowl, minus the chocolate chips.

* Mix all wet ingredients together in a separate bowl.

* Mix the wet ingredients with the dry, then add the chocolate chips.

* Place in a 4x8 baking pan.

* Bake for 45 to 60 minutes, or until knife comes out clean.

Briana's NOT so Chia Pudding

* all organic ingredients *

fresh cut apples and almond butter

fresh cut apples and almond butter

-3 T hemp hearts

-2 T chia seeds

-1/2 cup homemade nut milk

-1/4 cup fresh fruit

cinnamon to taste

TOPPINGS as you wish... nuts, coconut, seeds, chocolate chips, more fresh fruit, granola, honey, nut butter, cacao

 

 

 

Mix all ingredients in a glass container. (minus the toppings) 

Place in refrigerator overnight.

Take out of refrigerator when ready to eat and add TOPPINGS!

B.L.W.'s Homemade Pumpkin Ice cream

*ALL ORGANIC INGREDIENTS*

  • 3 cups raw cashews (soaked in water for 4 hours and drained)
  • 1 can pumpkin puree
  • 1/2 cup maple syrup or (agave, (vegan))
  • 2 cups homemade almond milk
  • 3 T olive oil
  • 3 T coconut oil
  • 3t cinnamon, 2t clove, 2t nutmeg, 2t ginger, 1t pink salt
  • 3 T vanilla extract
  • 1 package dark chocolate chips (vegan)

DIRECTIONS

Place wax paper in a freezer safe container before you start to mix all the ingredients. 

Place container in freezer to chill. 

Mix all ingredients in a Vitamix. 

Take container out of freezer.

Pour a layer of mixture in waxed lined paper container, sprinkle chocolate chips and continue the layering process until it is full to the top.

Last layer should be chocolate chips and sprinkle cinnamon on top. 

Place in a spot in the freezer where you can keep in flat. Freeze overnight.

Briana's Vegan French Toast

* all organic ingredients *

-- 2 ripe bananas
-- 1 cup of my homemade almond milk
-- 1 t cinnamon   
-- 1 t almond extract
-- 3 T coconut oil
-- 
6 slices ezekiel bread

Mash bananas, almond milk, cinnamon and almond extract in a glass bowl. 

Place each slice of bread separately into the bowl and cover it with the mashed ingredients.

Heat a pan to medium with 1 T coconut oil for every 2 slices of bread.

Top with your favorite toppings! (fresh fruit, honey or maple syrup)

B.L.W.’s Mocktails

-- 1 cup seltzer
-- 1/4 cup lime or lemon juice
-- Fresh mint, basil or lemon thyme leaves
-- 1 whole lime or lemon not peeled
-- 2 cups any frozen fruit you choose
-- 1 T honey or agave

 

Blend on high.  Add seltzer if more liquid is needed.

Pour a half cup of mixture over ice and top it off with more seltzer.

Pour any extra mixture into ice cube trays and you can have a mocktail anytime!  Just add seltzer or juice to the cubes.

B.L.W.'s Superfood Smoothie Bowl

*ALL ORGANIC INGREDIENTS*

  • 1 cup coconut water
  • 1/2 cup tart cherry juice
  • 1/2 cup Acai puree (frozen)
  • 1/2 cup blackberries (frozen) 
  • 1 T almond butter
  • 1/4 cup muesli or granola of choice
  • 1/8 cup raw nuts of choice
  • 1 t cinnamon  

DIRECTIONS

Place coconut water, tart cherry juice, acai, blackberries and almond butter in a high powered blender and blend together. 

Pour in a small bowl.

Add muesli or granola and raw nuts on top. 

Sprinkle with cinnamon.

You might want to choose some more fun add-ons to place on top! (fresh fruit, chia seeds, raw coconut, dried figs, dark chocolate pieces, just to name a few......)

BRIANA'S AFTERRUN QUENCHER

*ALL ORGANIC INGREDIENTS*

  • 1/2 lemon, rind taken off
  • 1 small lime whole
  • 12 oz coconut water
  • 1 cup filtered water
  • 1/4 cup local honey

DIRECTIONS

PLACE ALL INGREDIENTS IN A HIGH POWER BLENDER AND BLEND ON HIGH FOR 1 MINUTE

DRINK IN A MASON JAR!

BRIANA'S SUMMER CHICKEN SALAD

 
* all organic ingredients *
 
 
-- 4 pieces of cooked chicken breasts, unskinned
 
-- 1 6 oz jar, pesto
 
-- ¼ cup dried cranberries
-- ½ cup raw walnuts
-- 1 small red onion
-- salt, pepper, garlic powder, onion powder to taste
-- fresh oregano
-- 2 T flaxseed oil

Shred chicken, dice onion, and add all ingredients in a bowl, mix together with hands.

BRIANA'S AVOCADO TOAST

*ALL ORGANIC INGREDIENTS*

  • 1 small avocado
  • 1/2 lemon, juiced or 2T lemon juice concentrate
  • fresh rosemary
  • unique sea salt (pink for me!)
  • black pepper
  • 2 slices of your favorite bread (Ezekiel for me!) 

DIRECTIONS

Place avocado, lemon juice, rosemary, sea salt and black pepper in a bowl and mush together with a fork. 

Make toast your way.

Split the mixture in half and place it on each slice of bread. 

Sprinkle with extra black pepper to taste.

You might want to choose some fun add-ons to place on top! (smoked salmon, hard boiled egg, peppers, onion slices or tomato slices)
